mint and honey infused mojito
Mojito: A Mojito is a Rum based drink with a sweeter, lime, and fresh mint. I use fresh mint from the yard, and our honey as the sweetener. Then poured over crushed ice.
Serves 3 to 4
1/8 C Fresh Honey (to taste)
1/8 C Fresh Squeezed Lime Juice (to taste)
1/8 C Fresh Mint Leaves
1 C White Rum
I like to mix in a blender with a flat plastic "cookie maker" blade. It will muddle the mint leaves, and dissolve the honey easily. In the blender, mix honey, lime, mint, and rum at room temp. Mix with the cookie blade until the honey has dissolved into the mixture. Fill your cup with crushed ice, and pour the liquid through a strainer to catch and remove the leaves. Place one mint spring on the glass for looks, and serve. Remember, some might like sweeter or more tart. Add more honey, lime, or rum to taste.
Honey Siracha Lime Garlic Salmon or Swordfish
This is fantastic to pair with the Mojito above.
1/8 C Fresh Honey
1/8 C Siracha Sauce
2 Cloves Diced Fresh Garlic
1 Lime Freshly Squeezed
Light Soy Sauce rub for fish
In a skillet, mix honey, siracha, lime, and garlic. Bring heat up until honey is incorporated. Rub a thin coat of Soy Sauce over the fish of choice. Place your fish in the skillet and sauté both sides until done. Serve, and pour the sauce over the top of the fish.
